American IPA

This beer is for all you hopheads. It could easily be called liquid hops. If you enjoy bitter beer face, then this IS the beer for you. The bitterness in this beer is similar to Anderson Valley’s Hopottin IPA.

10 gallons
O.G. 1.065

20# Great Western 2-row malt
2# Briess 10L crystal malt
2# Briess Victory malt

26 HBU Chinook hops (boil 90 minutes)
20 HBU Chinook hops (boil 60 minutes)
3/4 oz. Chinook hops (boil 30 minutes)
2 oz. Columbus hops (steep 2 minutes then add 1 oz. to each fermenter)

2 tsp. Irish Moss (boil 15 minutes)
2 Tbsp. Yeast Energizer
2 tsp. gypsum (1/2 tsp. in mash, 1-1/2 tsp. in boil)
2 packages Wyeast 1056 American

Mash 90 minutes at 160F with 1.3 quart of water to each pound of grain. Sparge at 170F for 1 hour. Add first addition of hops after hot break and start 90 minute boil from there. Chill wort to 60F, add yeast and ferment at 65F. Age 2 months in kegs.
